This past Sunday I was doing my usual grocery shopping for the week at HEB (HWY 6 & Bellaire) and noticed an intriguing product, Bruce’s Sweet Potato Pancake Mix.  I never heard of this type of pancakes, but have always known the sweet potato is a very nutritious vegetable loaded with vitamins and phytonutrients.  Plus it tastes great! 
I decided to give it a try and figured the most I had to lose was $5.50 for the package.
I found the pancakes to have a rich, naturally sweet taste, but not loaded with sugar.  The pancakes are low in fat, with no cholesterol, preservatives or trans fats, and are endorsed by the American Heart Association.  Just add water (I prefer soy milk). 
It’s a good alternative to the usual pancakes.  Experiment and give it a try!

    What kind of syrup that is low fat would taste good on those pancakes?

    Try using the brand “Hill Country Fare.” It’s sugar free and tastes descent. Or, add lots of heated blueberries.
